Monster Oat Cookies (eggless) Recipe

Go big or go home, right? 😉 Well these cookies are definitely huge. You can only bake 6 at a time on a cookie sheet. There are two ways to make these monster cookies, and in a moment of desperation I attempted an eggless version and increased some ratios to compensate. These taste awesome with the eggs, but if you want a more healthy alternative you can use the eggless version…they taste more “healthy” too. And the fun part is, you can change these cookies to include whatever you have on hand…like chocolate chips, coconut flakes, raisins, quick oats, pecans, walnuts, etc…seriously, whatever you have on hand. Monster Oat Cookies (eggless)

Ingredients
  1. 2 c brown sugar
  2. 1 c white sugar
  3. 1 c butter/margarine
  4. 1 c shortening (Crisco)
  5. 15 oz can applesauce
  6. 2 tsp vanilla
  7. 2 tsp baking soda
  8. a pinch of salt
  9. 4 1/2 c flour
  10. 2 c quick oats
  11. Add-ins (You can customize, add ingredients you like that aren't listed. Just don't use more than a cup of each add-in. Up to 5 add-ins.)
  12. 1 c semi-sweet chocolate chips
  13. 3/4 c chopped pecans
  14. 1/2 c sweetened shredded coconut
Instructions
  1. Preheat the oven to 350*F, and grease a cookie sheet.
  2. Cream together the sugars, butter, shortening and eggs.
  3. Add the vanilla and applesauce, and mix well.
  4. In a separate bowl, add the salt, baking powder, flour and oats.
  5. Stir the add-ins into the batter, and mix well.
  6. Using an ice cream scoop, drop 6 cookies on the cookie sheet with 3 inches space.
  7. Cook for 16-18 minutes.
  8. Let cool for one minute on sheet and then transfer to cooling rack to finish cooling.
